Ingredients:

  • 600g Harmless Vegan Chicken
  • 1L chicken stock (I used Massel)
  • 5 small golden potatoes (cut into 2cm pieces)
  • 3 fresh green chillies
  • 1 leak (diced)
  • 1 brown onion
  • 2 cans creamed corn
  • 1 tsp diced garlic
  • Salt + pepper to taste
  • Optional* 500ml heavy cream (if you want a chowder)

Instructions:

  1. Prepare your ingredients by cutting the Harmless Vegan Chicken into bite-sized pieces, chopping the green chillies, dicing the leek and onion, and cutting the potatoes into small pieces.
  2. In a slow cooker, add the diced onion, diced leek, and diced garlic.
  3. Add the vegan chicken stock, diced potatoes, Harmless Vegan Chicken, creamed corn, and chopped green chillies to the slow cooker. Stir well to combine.
  4. Cook on low heat for 4 hours, or until the potatoes are fork-tender and the flavours have melded together.
  5. If you want a creamy chowder, you can add the vegan heavy cream during the last 30 minutes of cooking. Stir it into the soup and let it cook for another 30 minutes.
  6. Season the soup with salt and pepper to taste.
  7. Once the soup is cooked to your desired consistency and the flavours have developed, turn off the slow cooker.
  8. Serve hot and enjoy your delicious vegan chicken corn soup!

Note: Cooking times may vary depending on your slow cooker, so make sure to check the potatoes for doneness. You can adjust the seasoning and thickness of the soup according to your preference. If you like a thinner soup, you can add more vegan chicken stock. If you prefer a thicker soup, you can let it cook for longer or add more cream. Enjoy!
