Healthy Vegan Sweet Potato & Nut Butter Brownie with Frosting

Are you ready for this healthy, gluten free, vegan, oil free, nutty sweet potato chocolatey brownie goodness? A perfect alternative to traditional chocolate brownie!

Cook time* depends if you already have sweet potato puree or bake the sweet potato. I recommend baking the sweet potato for best results.

Brownie:

  • 1 cup Sweet Potato Puree (1 medium sweet potato)
  • 1 cup Peanut Butter
  • 1 tsp Vanilla Extract
  • 1/3 cup Almond Flour
  • 1/2 cup Choc Chips
  • 2/3 cup Sugar
  • 1/3 cup Cocoa Powder
  • 1 1/2 tsp Baking Soda
  • Pinch of Salt

Frosting:

  • 1 cup Sweet Potato Puree (1 medium sweet potato)
  • 250g Chocolate
  • 2 Tbsp Peanut Butter

Method:

  1. Cut the sweet potatoes (bake both sweet potatoes at the same time to save time) in half and bake for approximately 30 minutes at 180°C on fan bake. Once cooked, set aside one for the icing later*.
  2. Combine all dry ingredients and wet ingredients separately. 
  3. Once sweet potato is done, remove the soft puree from the skin and mash into the wet ingredients.
  4. Prepare a baking dish by lining with parchment paper. Combine all of the wet and dry ingredients together and place into the dish. Bake for 20 minutes - mixture will look underdone, but you want that gooey chocolatey moist brownie texture.
  5. Place in the fridge for an hour or until cold before icing.
  6. Once the brownie has cooled down, the icing is ready to be prepared. 
  7. Fill a saucepan with 1-2 inches of water. Place on stovetop and bring to a boil.

  9. Place chocolate in a smaller bowl and mix frequently, ensuring that all the chocolate incorporates and melts consistently (2 to 3 minutes).
  10. Once the chocolate is melted, scoop out the pureed sweet potato into the mix and mix until smooth. Pour over the brownie and place into the fridge for half an hour to set. 
  11. Enjoy! This is really nice served with some whipping cream or ice cream!
