Vegan Chicken Satay Burger

Sandwich Filling:

  • Harmless Food Co Plant Based Chicken approx 300g
  • 1x Carrot
  • 1x Beetroot (fresh)
  • Gherkin
  • Fresh Coriander
  • Burger Buns
  • Vegan Mayonnaise 

Chicken Marinade:

  • 2 Tbsp Olive Oil
  • 2 Tbsp Kecap Manis
  • 1 tsp Garlic
  • 1 tsp Ginger

Satay Sauce:

  • 3 Tbsp Fix & Fogg Smoke And Fire Peanut Butter
  • 1/3 cup Kara Coconut Cream + 1 Tbsp Water
  • 1 tsp Brown Sugar
  • 2 Tbsp Kecap Manis
  • 2 tsp Soy Sauce
  • 1 Tbsp Lime Juice

Pro tip: cooking the chicken from frozen really helps to keep the chicken in one piece!

Method:

  • Combine all the Marinade ingredients into a bowl and spread over both sides of the Harmless Chicken. Cook for about 20 minutes in the oven at 180°C on fan bake. Remember that the plant based chicken is already pre-cooked, so only needs to be cooked until that marinade has soaked through the chicken.
  • While the Chicken is cooking, you can make the satay sauce. Combine all Satay Sauce ingredients together and stir until smooth. Cook sauce on a stove top until thick (should only take a few minutes).
  • Once the Satay sauce is done, prepare the sandwich ingredients. 
  • Combine all together and enjoy!
