Today's recipe is Vegan Hot Cross buns and they taste AMAZING!
This is the perfect thing to do this long weekend as it is Easter after all and you just can’t get better then homemade Hot Cross Buns!
1:Add the yeast, sugar and lukewarm water to a bowl. Leave to stand for 5 minutes, until the yeast has foamed up
2:While waiting on the yeast, combine all wet and all dry ingredients into separate bowls.
3:Once the yeast has foamed, add the yeast, water, sugar mix into a large bowl, along with all remaining dough ingredients. Mix the batter until it starts sticking, I used a standard knife
4:Use your hands to knead the dough for around 4 minutes
5: Form a large dough ball and place into a lightly oiled bowl (I used a glass bowl), put glad wrap over it/a tea towel and put in a warm place for at least one hour - OR until the dough has DOUBLED in size.
6: Once the dough has doubled in size, take it out and knead it a few times just to get any air bubbles out.
7: Line a tray (approx 27cm by 33cm) with baking paper. Roll the dough into 12 perfectly formed balls, if you don’t make them near perfect they will bake in the shape you set them! Don’t worry if the balls are set close together.
8:Preheat the oven to 190℃.
9: Cover the balls with a tea towel and leave to rise for a further 30 minutes.
10: While they are rising, make the glaze. After 30 minutes is up, brush the glaze over each roll.
11: Bake for 20 minutes OR until golden brown.
12: Once the buns are cooked, make the icing by combining all icing ingredients in a bowl, it will be thick!
13: Once the buns are cooled, put icing into a piping bag OR cut a small corner in a glad bag and use this to pipe the icing onto the buns while they are cooling
Toast and spread your favourite plant butter! Nothing beats fresh hot cross on Easter!
